1994 Wasem TBA - Noble Sweet: The word Trockenbeerenauslese describes the rare phenomenon, whereby the grapes shrivel up like raisins and a beneficial mold (botyrtis cinerea – noble rot) imparts a rich flavor. Enough grapes are typically picked by one person in a day to produce a single bottle. In 1994 Holger Wasem produced a small quantity of Huxelrebe TBA and with 14 years of aging, a rich, full-bodied wine has evolved with honey, raisin and smoky caramel flavors. This TBA is dark bronze in color, powerful and long lasting, designed to impress a serious wine drinker. The bouquet of this gem is full of exotic dried fruit, berry jams and entrancing maracuja notes. The high acidity will allow this wine to age for a long time to come and assure that it remains fresh and lively. A very impressive wine, both as an aperitif and a dessert wine, particularly with creamy delicacies. Another great match are strong blue cheeses, such as Roquefort.
1996 Gutzler Chardonnay Ice Wine - Noble Sweet:
A natural Ice Wine is produced only every few years, when vintners are able to harvest a small percentage of grapes at the first frost. Even under the best circumstances, an Ice Wine is harvested in extremely small quantities, if at all. The wine savors exotic destinations and shows characteristics of tropical fruit, pineapple, mango and maracuja. Because the wine fermented in barrique barrels, it finishes with the slight smoky texture of wood and a touch of vanilla. It has matured into a rich, full-bodied wine with apricot jam, honey and raisin flavors. Rich copper in color and like a fine cognac, this wine truly must be tasted to be appreciated! It is a pleasure to drink on its own, with a light pastry dessert or with rich cuisine such as foie gras.
2003 Dr. Hinkel TBA - Noble Sweet: The pinnacle of German dessert wines is the Trockenbeerenauslese (TBA) and this 2003 Dr. Hinkel TBA from the Huxelrebe grape captures all the spirit and tenacity of a great TBA. Fully botrytised, this TBA is strong and ripe with the ability to be drank today or aged for many, many years to come. 2005 Blees-Ferber Riesling Auslese - Sweet: This Auslese is from the Piesporter Gärtchen vineyard, which is a parcel solely owned by Stefan Blees and located in the center of the famous Piesporter Goldtröpfchen vineyard. While the aroma of this wine is of freshly sliced peaches showcasing the distinctive Mosel minerality, the flavors that develop in the mouth resemble a childhood trip to the fair and range from sour apple to cotton candy. This noble sweet dessert wine pairs well with pastries and creamy desserts.
