In the glass wine has a dark red ruby core with an opaque rim. On the nose, the wine bursts with blackberries, red currant, and raspberry intermingled with pine, tar, and licorice. On the palate the wine is savory and rich showcasing a hint of spice behind layers of earth and dark fruits. The wine is muscular showcasing the ability of two up and coming winemakers.
100% Cabernet Sauvignon from 5 plots totaling 3 hectares on E/N-E facing clay-limestone, fresh soils. The grapes are hand harvested and undergo a 8-10 day steel vat vinification. The wines see 50% whole bunch with light pumping overs only, taken from vat at 1020-1030 specific gravity to avoid excess tannin. The unfined, unfiltered, organic, biodynamic wine are aged in 5-8 year 228-litre oak casks for 13-14 months.
Pairing: Stewed beef, braised lamb, grilled chicken and soft cheese.
