This blend of 70% Shiraz and 30% Merlot is hand crafted by Paolo Paoloni in the clay and sandy soil of the Valle de Guadalupe Mexico. After three weeks of contact with skins & seeds, the juice then undergoes malolactic fermentation for 12 months in French Oak barrels. Dark red in color an intense nose with rich blackberry and violet notes. Spiced with hints of cocoa and leather aromas. Full body, jammy fruit, soft tannins, complex and long finish.
Pairings: Perfect with mole, escamoles tacos, pork belly, brick oven pizza, bacon wrapped figs, hard aged cheeses.
