Ted Henry of Prime Cellars has a true love for winemaking. After many years of making wine for other large wineries, Ted developed a relationship with the climate and soils of Coombsville. PRIME is a result of focusing on this special area of Napa Valley. His desire is to show the unique characteristics that come from making wine out of Coombsville.
Prime Cabernet is aged for 20 months in 28% American and 72% French oak (of which 80% is new). This blend is 89% Cabernet Sauvignon, 7% Cabernet Franc and 4% Merlot.
As usual with the PRIME Cabernets, the grapes were picked at moderate sugar levels despite harvesting well into October. Full bodied dark red garnet color. Expect roasted coffee, chocolate and winter spiced fruit. Medium tannin, finishing with slight green notes.
Pairings: Beef tenderloin, rosemary rubbed pork leg, kobe spare ribs, beef tacos, soy glazed vegetables, grilled mushrooms
