Rootstock uses certified sustainable farming practices. An approachable wine from the Maule Valley in Chile that boasts classic notes of blackberries, currants and toasted spices. This Cabernet is cold soaked for deep color extraction and structure. It is then aged in used barrels for 12 months before its release.
The Maule Valley has left its mark as one of the first areas in Chile to be planted under vine. It is the largest wine growing region in Chile next to the Central Valley. The region is situated roughly 180 mile south of Santiago, in between the Andes Mountains and the Coastal Mountains. As one of the southernmost regions in Chile, the air is warm during the day cool during the evening. Winter rainfall is higher. These elements allow for the fruit vines to produce fruit that has a beautiful symbiosis of ripeness and acidity.
Pairings: Trios pairs well with carne asada beef, flatiron steak, BBQ pork ribs, seared lamb chop, firm cheeses.
